Last nights dinner

After walking the Williamsburg Bridge into the city and back, I wasn’t in the best cooking mood. I still wanted to cook but just something quick, that will get me in and out of kitchen. I made Chicken cutlet ,seasoned with thyme, kosher salt and ground pepper. Pan fried with EVOO and garlic roasted sweet potato mash. Topped with saute shallots and green peppers. Took about 20 minutes! Great!
 Simple yet delicious!
